Recently the W.K. Kellogg Foundation reported that most Americans want changes to provide healthy school meals to our nation's students. The survey of more than 800 Americans from all over the country found "near-universal agreement that childhood obesity is a problem or crisis, and that improving the health of American children requires communities to prioritize access in schools to fresh produce and exercise." . . . Healthy, Kid-Friendly Recipe: Black Bean Cakes | by Mark Bishop
Henry loves going to Chipotle for black beans, rice and chicken. I thought maybe I could compete by making black beans and rice at home -- although when I made my beans, I shredded carrots and broccoli into the dish for extra nutrition. And while these homemade beans were really good, Henry wasn't into them -- and my wife can only eat so many beans in a given week. The end result was that we had a lot of black beans sitting around in my fridge. So I decided to turn lemons into lemonade, or at least turn black beans into black bean cakes.
