Teachers Prepare for Cooking up Change Healthy Cooking Contest
Winning school lunch entry will be served in all Chicago Public Schools

Culinary teachers check out healthy cooking techniques at an HSC workshop Sept. 5

Chicago Public Schools culinary teachers gathered Sept. 5 at Kendall College to learn about healthy cooking techniques and the logistics of a cooking competition in which their students will vie for the honor of having the healthy school lunch they create served in all the district's schools.

With Cooking up Change 2007, our 5th annual benefit, HSC is launching a new Healthy Cooking Contest for high school students enrolled in the Chicago Public Schools culinary arts program.

Teams of students from 17 high schools will compete in categories for appetizers, desserts, and school lunch. The appetizers and desserts will be served at the benefit, and the winning entry in the school lunch category—which must meet the stringent cost requirements and nutrition guidelines that Chicago food service directors face—will be served to students throughout the school system. At the workshop, teachers discussed ways to create healthier versions of popular appetizers and desserts, and planned for in-class visits from local chefs to further prepare their students.

Michelle Hassan, manager for culinary arts of the CPS Education to Careers program, explained that the contest offers a unique opportunity for students to experience pride in their work while gaining professional experience relevant to these trends.

"We're developing students to be the chefs of tomorrow," said Hassan. "As our society becomes more health-conscious, these are very valuable skills for them to take into the job market."

HSC Marathon Team Approaches Finish Line

HSC's team running the LaSalle Bank Chicago Marathon is racing through the final miles of training and fundraising for this world-class athletic endeavor. Who is running for HSC? In each newsletter, we'll introduce you to another member of our remarkable team:

"This October 7, days before our son Matthew's second birthday, I’ll run my seventh Chicago Marathon, hoping to improve on my epic 20,219th-place personal best. I'm training hard and may have a shot at winning if the Chicago area's top 20,000 runners all manage to oversleep. I've come a long way since my first marathon in Honolulu, in which my wife Paula and I narrowly defeated a man running the race backward while wearing a pink leotard. While my participation won’t cause Kenyan runners heartburn, my run has a purpose. As an environmental lawyer and father of two, I'm pleased that this year I’ll be fund-raising for a wonderful nonprofit group, the Healthy Schools Campaign. I'm far from a born athlete (in eighth grade, the football team created a third string just for me). But this run gives me a great chance to get reconnected, to my body, to family, and to the dazzling skyline and neighborhoods of my ancestral home. It also brings me to Chicago in October just in case the Cubs do the unthinkable for the first time in 99 years. Your contribution will ensure that regardless, there will still be an important victory."

Program Updates

Parents Begin Work Establishing School Health Councils

Jovita Flores and Kim Wasserman of Little Village Environmental Justice Organization demonstrate simple ways to integrate physical activity into the school day at a Parents United training.

Parents who participated in training from HSC's Parents United for Healthy Schools/Padres Unidos Para Escuelas Saludables are speaking at Local School Council meetings throughout Chicago this month to discuss the importance of family and community involvement in implementing the district wellness policy at a school level.

Parents are advocating for the creation of School Health Councils that will serve as a formal venue for parent involvement in creating healthy change at school.

At McCormick School, a Parents United group including HSC's Guillemo Gomez successfully requested the creation of a School Health Council and are in the process of establishing it at the school.

Parents who attended the training will reconvene in October to reflect on the successes and challenges in working to establish School Health Councils and to develop plans for moving forward with healthy change at schools.


Austin Parents Kick Off Environmental Health Leadership Training

Fifteen parents from Chicago's Austin community came together to begin creating change for improved environmental health at their children's schools with a training Sept. 10 presented by HSC and COFI (Community Organizing and Family Issues).

The session, which focused on leadership training and an introduction to environmental health in schools, is the first of an ongoing series for parents and school staff in the predominantly African-American community of Austin. Through the training, parents will take steps to improve the indoor air quality and other environmental health factors in schools.

Parents and school staff in Austin community are welcome to join the training! The next session will be held Oct. 16. For details, please contact Claris Olson.
